Chocolate Mint Adorable Smoothie


We all know that eating fruit is extremely beneficial to our health and well-being. However, finding the time to eat enough fruit per day can be difficult due to busy lifestyles.

Smoothie recipes mostly contain fruits that are easily obtainable from your local store and are very simple and easy to make - as long as you have a smoothie maker! It has never been easier to make your own smoothies for consumption at home or work.
But this time i want to share with you a chocolate smoothie...

The benefit of making your own smoothies is that you know exactly what has gone into them, and you can save yourself a small fortune too!

Chocolate Mint Adorable Smoothie
(serves 2)\

Ingredients

2 good scoops of peppermint chocolate chip ice cream
1/2 cup low fat milk
2 drops peppermint extract

Method
Place all ingredients in the blender, blend until smooth. Serve immediately.

Liteyo Panna Cotta with Raspberry Sauce


if u wanted to know what is Liteyo..u can go to any supermarket..i mean in Malaysia..i dont know wheteher ths stuff u can find it elsewhere...but it is actually a small tub of flavoured yoghurt..so in case u dont find any liteyo..other brand will do just fine..here is the ingredients...

1/8 cup water
1/2 tsp gelatine powder
650ml whippping cream
1/4 cup sugar
i cup liteyo aloevera and green tea yoghurt
1/2 tsp vanilla extract

method
1. pour water into small bowl and sprinkle gelatin over
2. let mixture stand for 10 minutes
3. simmer cream and sugar over medium heat
4. stir sugar until dissolves then remove from heat
5. whisked in yoghurt and vanilla
6. divide mixture amongst four shot glasses
7. cover and chill overnight

raspberry sauce
1. 100gm raspberries
2. 20gm sugar

1. simmer raspberries and sugar until the latter melts thoroughly
2. let it cool. chill and serve with panna cotta
3. take a small spoon..take a small scoop and lets it melt in your mouth...hehehe..

Banana Pudding



Some things are best left unchanged, and banana pudding is one of them. This classic banana pudding is fast, easy and will remind you of the good old days. Fresh bananas are layered with vanilla wafer cookies and a rich vanilla pudding for a no-bake dessert that will please all.

INGREDIENTS:
1 (14-ounce) can sweetened condensed milk (NOT evaporated milk)
1-1/2 cups cold water
1 (4-serving-size) package instant French vanilla pudding and pie filling mix
2 cups (1 pint) heavy whipping cream
40 vanilla wafers cookies (about)
3 to 4 medium bananas, sliced and dipped in lemon juice from concentrate
4 vanilla wafers, crushed to crumbs for garnish

PREPARATION:
Combine sweetened condensed milk and water in a large mixing bowl. Add pudding mix and beat on medium speed for 3 minutes.

Refrigerate pudding mixture for 15 minutes.

Meanwhile, whip heavy cream to stiff peaks. Fold whipped cream into chilled pudding mixture until combined.

Select a large (3-quart) decorative glass bowl. Spread 1/2 cup of pudding around the bottom of the bowl and top with one-third of the vanilla wafers, followed by one-third of the bananas and one-third of the remaining pudding. Continue layers, finishing with pudding on top. Sprinkle with crushed vanilla wafer crumbs. Chill at least 4 hours before serving.

Refrigerate leftovers.

Yield: 8 to 10 servings

here u go..a simple but mouthwatering desserts to go wth any of yr meal..and dont forget..bananas are good for constipation too..incase u might need it..hehehe

Mixed Fruits Jelly


The weather outside there is very hot and i need something to cool me down...i dont feel like eating heavy meals...so as usual i will open my cupboard to see what i can do for today...

then i see this tropical mixed fruit can waiting for me to do something with it..the first thing i want to do is to just open the can,take a spoon, scoop and go straight into my mouth...but hey..no...i think i want to make a jelly...atleast when my friends come over and open my fridge they will have something to munch on...

It is so easy to make and i'm sure even a 9 years old also can do it...so do you..

Ingredients ( 5-6 )

10g jelly powder
1.5l water
100ml fresh milk
200g sugar
1 can canned mixed fruits
2 screwpine Leaves

Directions
Put jelly powder, water, syrup in the mixed fruits, sugar and screwpine leaves in a pot, bring to boil.
Slow down the heat, cool down a cup of the mixture in a bowl. Stir the cup of the mixture in the bowl before it become hard and keep aside.
Add fresh milk in the pot and bring to boil. Remove from heat.
Place the jelly into a container (don`t forget to filter out the hard one)
Add in the mixed fruits and the jelly from the bowl in step 2 in the container
Cool completely and refrigerator before serve.

Mango Lassi



This is one of my favourite drink....i planted a mango tree infront of my house about 4 years ago...and it was fruiting a lot especially during dry seasons...i dont know what to do with these mangoes until one day i saw this drink on a menu..in an indian resturant to have my banana leaf dishes...

its so delicious and refreshing plus the vitamin c..now you can try this out..

1 1/4 cups plain low-fat yogurt
1/2 teaspoon lemon juice
1/2 cup fresh mango pulp*
1/3 cup cold water
1 to 2 tablespoons honey or sugar (depending on how sweet you want it)
9 to 10 standard-size ice cubes

* Canned or frozen mango may be substituted

If using a fresh mango, peel and remove the flesh from the pit; cut mango into small pieces.

In a blender, add yogurt, lemon juice, mango pulp, water, and honey or sugar. Blend approximately 2 to 3 minutes or until you see a little forming in the mixture. Add the ice and blend until frothy! NOTE: Some people like to pour the mango mixture over ice cubes instead of blending the ice cubes in the drink.

Makes 2 servings.

Paradise Peach Pie


That day i stumbled upon a blog by Jazevox..his blogs had this photos of fresh peaches just been picked..it was an awsome sight...then i thought why not wrote down about some peach recipes..he might want to try because he got a lot of peaches waiting to get done...so my friend..now it is up to u whether u want to try this recipe or not...

Ingredients and Directions

1/2 c Pecans

5 Peaches

1/2 c Chopped dried pineapple

3/4 c Chopped fresh pineapple

1/2 ts Apple pie spice

1/2 ts Cinnamon

2/3 c Pitted soft dates

1/2 c Fresh berries to garnish

1 ea Pie crust, see recipe

In a small bowl, cover pecans with water & soak for 8 to 12 hours. Drain & rinse & set aside. Peel & halve the peaches, reserving the skin. Remove the pit & thinly slice the flesh. Set aside. In a food processor, blend peach skin with the pecans & both pineapples, spices & dates. In the pie shell, layer half the the peach slices in a fanned spiral. Evenly spread half the pineapple mixture over the peaches. Repeat the process. Garnish with fresh berries of your choice. Serve immediately or refrigerate & serve chilled.

CHOCOLATE-DIPPED STRAWBERRIES

This recipe is very easy to do...and i am sure you will love it...this recipe also increasingly famous as a wedding gift..trend setting by Datuk Siti Nurhaliza on her wedding day..a gift from Datuk K..why wait? Lets do it...

12 oz Semisweet chocolate pieces
6 tb Butter or margarine
1/2 ts Vanilla
Strawberries with stems

Melt chocolate pieces in top of double boiler. Blend in butter and vanilla.
Dip strawberries in chocolate, swirling to coat evenly. Place on waxed
paper and set in cool dry place.

Hmmm...i love this...feel like living in heaven...

Raspberry Ravel


8 ounces of vanilla wafers
3/4 cup butter
2 1/2 cups powdered sugar
2 eggs
1 teaspoon vanilla
1 pint frozen raspberries, thawed and drained
8 ounce container of whipped topping

1. Grease a 9 x 11-inch pan. Crush the vanilla wafers. (The easiest way to do this is to put the wafers in a plastic bag and crush them with a rolling pin.)

2. Reserve 1/4 cup of the crushed vanilla wafers and put the rest in the bottom of the greased pan.

3. Beat the butter, powdered sugar, eggs, and vanilla together. Put this mixture on top of the crumbs. Spread the mixture from the edges of the pan inward to help keep the wafer crumbs in place.

4. Spread the drained raspberries on top of that mixture. Add the whipped cream and sprinkle the 1/4 cup cookie crumbs over the top.

Refrigerate overnight. Serves 12.

Sesame Noodles


2 tbsps olive oil
5 cloves garlic. minced finely
300g medium prawns, shelled
150g red capsicum, sliced thinly
300g spaghetti, boiled till just done and drained

Noodle Dressing (mixed well)
50ml sesame oil
3 tbsps olive oil
4 tbsps light soy sauce
1 tsp salt
2 tps sugar
4 tbsps cider vinegar
4 tbsps smooth peanut butter
3cm ginger, cut into fine strips
2 tbsps sesame seeds, roasted and pound coarsely
50g finely chopped spring onions

Heat oil and stir-fry till cooked , 2 to 3 minutes
Addred and green capsicum. Stir-fry for about 1 min.
Pour in dressing and mix well. Remove from fire. Add spaghetti. Toss and mix well. Serve immediately

Broccoli Quiche


1 packet ready -made shortcrust pastry
1 medium-size onion, chopped
200g broccoli florets, chopped, blanched lightly by cooking in hot boiling water for 1 minute.
4 larfe eggs, beaten lightly
250ml milk
Salt and pepper to taste
160g grated Cheddar cheese (or use your favourite cheese)

How To Make:
1. Grease a 20cm pie dish or 5 small pie dishes
2. Preheat oven at 210c.
3. Roll out pastry and line pie dish. Trim edges to fit pie dish
4. Spread onion and broccoli over pastry. Set aside
5. Combine eggs, milk, salt and pepper. Pour over onion and broccoli. Sprinkle
cheese over.
6. Bake for 7 mins. Lower heat to 180c, continue baking for 20 mins. Seve hot.

Serve for 6 peoples. Easy protein filler for the day. Try this out and share with me how you find this broccoli quiche.

Buttermilk Pancakes Studded With Macadamia Nuts & Topped With Homemade Pineapple Syrup



Boxed buttermilk pancake mixMacadamia nuts

Syrup:1/2 cup

1 stick butter

1/2 cup sugar

1/4 cup pineapple juice concentrate (right out of the can)


I take the easy way by making buttermilk pancakes from a store-bought mix. I also like these with cashews instead of Macadamia nuts. Just add coarsely chopped macadamia nuts to the batter, as much as you'd like.


For the syrup, in a small saucepan, place butter, sugar and pineapple juice. Heat over low heat, stirring, until butter melts. Do not boil.

Preheat oven to 475. Peel, core and very thinly slice the apples: you should have approximately 1-1/2 cups. Melt 3 T sp. of the butter over medium low heat in a small fry pan, and saute the apples until they are just tender. Keep apples warm while preparing the batter.

Place a 9 or 10 inch cast-iron skillet in the oven to heat for at least 5 minutes--the pan has to be very hot for this to work. When it is well heated, add the remaining 2 T sp. of butter to melt and put the skillet back in the oven; the butter should be very hot buy not brown when you add the apples and the batter. Place the flour, milk, vanilla, salt and nutmeg in a blender and whirl until smooth. Remove the skillet from the oven.Just add coarsely chopped macadamia nuts to the batter, as much as you'd like.For the syrup, in a small saucepan, place butter, sugar and pineapple juice. Heat over low heat, stirring, until butter melts. Do not boil.
You can add strawberries or bananas if you like.

Lamb, Watercress & Orange Salad

Ingredients

750g lamb loin

1 clove garlic, crushed

2 tbsps barbecue sauce

4 small oranges, peeled

1 bunch watercress, trimmed

1 small red capsicum, sliced thinly

4 spring onions, sliced

1/3 cup pine nuts, toasted (available in supermarket)


Dressing

1/3 cup olive oil

1/2 tsp finely grated orange rind

2 tbsps orange juice



1. Place lamb, oil, garlic and bbq sauce in a large bowl. Mix until lamb is well coated. Cover, refrigerate for 2 hours, or overnight.

2. Remove pith from oranges. Cut in between membranes to remove flesh. Set aside.

3. Cook lamb on a oiled pan until browned on both sides, about 5 mins. Remove from pan. Slice thinly.

4. Toss together lamb and other ingredients in a big bowl. Drizzle with dressing before serving.

Potato Pancakes

These are a nice change from regular pancakes. They make a great dinner meal when served with sausage.

Original recipe yield:
6 servings.
Prep Time:
25 Minutes
Cook Time :6 Minutes
Ready In:45 Minutes

INGREDIENTS:
2 eggs 2 tablespoons all-purpose flour
1/4 teaspoon baking powder
1/2 teaspoon salt 1/4 teaspoon pepper
6 medium potatoes, peeled and shredded
1/2 cup finely chopped onion
1/4 cup vegetable oil

DIRECTIONS:
In a large bowl, beat together eggs, flour, baking powder, salt, and pepper.
Mix in potatoes and onion. Heat oil in a large skillet over medium heat.
In batches, drop heaping tablespoonfuls of the potato mixture into the skillet. Press to flatten. Cook about 3 minutes on each side, until browned and crisp.
Drain on paper towels.

Yankee Salad

INGREDIENTS
1 (16 ounce) package uncooked orzo pasta
3/4 cup white sugar
2 eggs, beaten
2 tablespoons all-purpose flour
1/2 teaspoon salt
2 (20 ounce) cans crushed pineapple, drained with juice reserved
1 cup mandarin orange segments, drained and chopped
1 (10 ounce) jar maraschino cherries, drained and chopped
1 (12 ounce) container frozen whipped topping, thawed
DIRECTIONS
In a large pot of salted boiling water, cook pasta until al dente, rinse under cold water and drain.
In a sauce pan, combine the sugar, eggs, flour, salt, pineapple juice and cook over medium heat until mixture thickens. Remove from heat and cool.
Toss together the pasta and cooked pineapple juice mixture. Refrigerate overnight.
Break up chilled pasta with a spoon and mix in pineapple, mandarin oranges and cherries. Fold in thawed whipped topping, chill and serve.

Good Breakfast

Timeout Tuna Burgers:

1 can of tuna in water drained
2 eggwhites
1/2 ounce of Buckwheat pancake mix
1 teaspoon of curry powder
1 teaspoon of chopped onions.

Place tuna in bowl. Add egg whites and pancake mix. Mix in other ingredients and then mix all with a fork. Grill with fat free cooking spray. Make 2 burgers.

Protein Power Pancakes:

1 cup oatmeal
11 egg whites
1 whole egg
1 packet sugar free jello, flavor of your choice.

Simply stir together in a mixing bowl, cook on a frying pan, using fat free cooking spray.

Fit Fajitas:

1 egg yolk
6 egg whites
fat free cheddar cheese
fat free flour tortillas

Beat the whites and yolk and put in a skillet with fat free cooking spray. Then, cook the eggs over a medium flame. Turn eggs over and add some cheddar cheese. Meanwhile heat up the tortillas in the mike or oven. Then place eggs in the tortillas and roll up. Add salsa to taste.

Protein Shakes:

1 liter of milk
12 tablespoons of milk powder
6 eggwhites(fresh) or eggbeaters
1 teaspoon of brewer's yeast
some hot chocolate to taste
optional banana or icecream scoop

Shake and enjoy!

BS (Banana & Strawberry) Protein Shakes:
1 glass of whole milk
1/2 glass of cream
3 eggs(fresh)
2 glasses of fat free milk powder
1/2 riped banana
1/2 cup of strawberries.

Shake and enjoy!

OJ (orange juice) Protein Shakes:

1/2 glass of natural orange juice
4 tablespoons of milk powder.
2 eggwhites(fresh)
1/2 cup of strawberries
1/2 cup of icecream
2 teaspoons of honey

Shake and enjoy!

Banana Power Drink:
2 bananas
1/2 cup of cottage cheese
vanilla whey protein
cup of milk
some Ice
1/2 a teaspoon of brown sugar.
